One of my favorite vegetarian/vegan dishes is a cauliflower steak. It is one of the few entree dishes I like that don’t include meat. It may seem boring at first, but with the proper sauce and garnishments it will soon become your favorite dish! The caramelization/char on the cauliflower pairs perfectly with the red pepper sauce to make a vegetarian dish that everyone will like.

Ingredients:

Cauliflower:

  1. 1 head of cauliflower
  2. olive oil
  3. Oregeno
  4. Salt
  5. Minced Parsley
  6. 1 TB sliced almonds

 

Sauce:

  1. 1 red bell pepper small diced
  2. 1/2 onion small diced
  3. 1/4 cup chicken or vegetable stock
  4. 1/2 tsp salt

 

*will need blender or food processor

Instructions:

  1. Preheat the oven to 400 F
  2. Cut the cauliflower into 1/2 inch steaks, leaving some of the root on because this is what holds it together
  3. Cover both sides of the cauliflower with olive oil. Season generously with salt and dried oregeno.
  4. Place on baking sheet and bake 20 minutes. Once the 20 minutes is up flip them over and bake another 15 minutes.
  5. While the cauliflower is roasting make the sauce. In a saute pan over medium heat with olive oil, sweet/saute the bell pepper and onion and 1/4 tsp of the salt.
  6. When soft transfer to a blender and add the stock and 1/4 tsp of salt. Blend until smooth.
  7. Plate with sauce on top or bottom of the cauliflower steak. Garnish with sliced almonds and parsley and enjoy!
