One of the hardest Paleo desserts to make are cookies because of the chemistry behind the typical gluten and sugar filled cookies. This holiday season I was determined to make a festive Paleo cookie that is actually good and came up with these great Coconut Snickerdoodles! They are fluffy, taste like Christmas, and a great alternative to the classic snickerdoodle. Definitely give this a shot for any holiday parties or just for snacking!

Ingredients:

  1. 1/4 cup of melted coconut oil
  2. 1/4 cup maple syrup
  3. 1 tsp vanilla
  4. 1 egg and 1 egg white
  5. 1 and 1/4 cup of almond flour
  6. 1/4 cup coconut flour
  7. 1/4 tsp baking soda
  8. 1/4 tsp cream of tartar
  9. 1/2 tsp nutmeg
  10. 1/4 tsp cinnamon and 1 tablespoon (kept separate) 
  11. 1/4 tsp salt
  12. 1/2 cup shredded coconut

Instructions:

  1. Preheat oven 350F
  2. In a mixing bowl whisk coconut oil, maple syrup, egg and egg white until very thick, 5-10 minutes.
  3. In a separate bowl mix the almond flour, coconut flour, baking soda, cream of tartar, nutmeg, 1/4 tsp cinnamon,  and salt. 
  4. Slowly add the dry ingredients to the wet, mix until combined. 
  5. Fold in the shredded coconut
  6. Roll into balls and in another bowl roll in the remaining 1 TB of cinnamon until coated. 
  7. Flatten balls onto a greased baking sheet and bake for 10 minutes.
  8. Let cool and enjoy!
