Lately I have been having a strong sweet tooth, but instead of turning towards all of bad sugary items I have been making healthy “sweets” to satisfy the craving. This Banana Cream Chia Pudding has been my go to for when I am wanting something sweet. It is the perfect breakfast, dessert or snack, and it literally only takes 5 minutes to make. Try it out for a great Vegan, Paleo, Gluten Free, and Dairy Free treat!

Ingredients:

  1. 3/4 cup chia seeds
  2. 2 cups of full fat coconut milk
  3. 1 TB maple syrup, omit if you want it to be sugar free
  4. 2 tsp vanilla extract
  5. 1 banana mashed
  6. 1/4 tsp salt

Instructions:

  1. In a bowl mix all of the ingredients, making sure it is well combined and the banana is thoroughly mashed.
  2. Put in an airtight container and refrigerate overnight.
  3. In the AM it should be thick and set, enjoy it with toppings like more bananas, shredded coconuts, nuts and fruits.
