One of my all time favorite things to make in the kitchen is nut butters! I have experimented with all kinds of different nuts and flavors and this combo is by far the best. It is creamy, has the perfect amount of spices to compliment the cashews, and is perfect for fall and the upcoming holidays. I eat it almost every single day on sweet potato toast, bananas, paleo banana bread, flax bread, cacao, or sometimes just straight from the jar! It is so easy to make and is the ultimate crowd pleaser. This is also a great recipe if you have never made a nut butter at home. Cashews are naturally more creamy/buttery, so it is much easier on the food processor and for troubleshooting.

Ingredients:

1. 2 cups of roasted UNSALTED cashews

 2. 3 tablespoons of pumpkin pie spice (or more to taste)

3. MCT or Coconut oil, I use MCT because it is already in liquid form, where as coconut oil you have to melt down (will use up to 1/4 cup melted)

 

 

 

 

 

 

Instructions:

1. Place the cashews into the food processor and turn on high. You will allow this to run for quite some time, the cashews will start crumbling and building up along the sides, so when this happens take a spatula and scrape them down so they can continue to run through the food processor.

The cashews will soon start forming a crumby texture, this is good and means you are on the right track (as you can see below), continue to scrape off the edges.

 Next the cashews will start clumping into a ball and spinning around the food processor (see image below). Open the lid and break down the ball at this point and add the MCT or coconut oil, starting with one tablespoon at a time and slowly adding the oil as the food processor is on.

 The cashews will stop clumping once the oil is added and take on a creamy smooth texture.

2. Once it is creamy and smooth like a nut butter add the pumpkin spice seasoning and continue to process until well mixed!

You can add more pumpkin spice or even some natural sweeteners like stevia or honey if you want a sweeter and more flavorful nut butter.

3. Once mixed in take the spatula and scrape the spread into a sealable jar (such as a mason jar) and enjoy!
