While in NYC for New York Fashion week I did a lot of great eating. Unfortunately, the NYC costs are a lot different from South Carolina costs. I started eating cauliflower “oatmeal” in the mornings and desperately wanted a healthy Paleo granola to add a crunch. When I walked into my local Whole Foods to seek it out I was shocked that a tiny bag was $10. There was NO way I was going to spend that much on granola that would last me two days. So I walked over to the bulk nuts and decided I would do the damn thing myself.

The first round of Paleo granola I made in NYC was good, but the second round I made at home with all of my seasonings and full kitchen was a home run. It tastes just as good as granola with oats, but is only made with nuts and seeds, and has a fantastic crunch and flavor. Here, I put it on a smoothie, but its also amazing in coconut yogurt, oatmeal, or just with a spoon!

Ingredients:

  1. 1 cup raw almonds
  2. 1 cup raw pecans
  3. 1/2 cup raw hazlenuts
  4. 1/2 cup raw pumpkin seeds
  5. 1/4 cup raw sunflower seeds
  6. 1 TB flaxseeds
  7. 2-3 TB coconut oil
  8. 1 TB cinnamon
  9. 3 TB honey (if you want it sweetened)
  10. 1 TB vanilla extrac
  11. 1/2 cup shredded coconut
  12. 1/4 cup cacao nibs

Instructions:

  1. Put all the nuts and seeds into a food processor (except the shredded coconut and cacao nibs). Pulse 5-7 times until the nuts are broken up but not too much, just small “granola-y” pieces.
  2. Add the coconut oil, honey (if using), Cinnamon, dash of salt, and vanilla and pulse 3 times until it clumps together
  3. Stir in the shredded coconut
  4. Use a dehydrator at 120 degrees for 10 hours flipping halfway through. If using an oven, cook on 300 degrees F for 10 minutes, or until it reaches the desired crunch!
  5. Add in the cacao nibs once it has cooled and enjoy!
