Summer is my favorite season because many of my favorite desserts come from fruits. I am not a huge fan of added sugars, so when solving my sugar cravings I go for in-season fruits. This past week I got a huge basket of fresh strawberries from the local farmers market. I decided to combine a few of my favorite things, coconut butter, coconut flakes, matcha, and strawberries to make the perfect dessert. They are perfect for snacking, fun dinner party bites, or to cure your sweet tooth.

Ingredients:

  1. 1 lb of Strawberries
  2. 1 12 oz bag of unsweetened shredded coconut (I use Bob’s Redmill)
  3. 1/4 cup of melted coconut oil
  4. 1 tsp Unsweetened Matcha Powder

*will need a food processor or Vitamix

Instructions:

  1. Was the strawberries and lay out on paper towel to dry
  2. Reserve 1/4 cup of the shavings for decorating the strawberries
  3. Add the rest of the shaved coconuts to a food processor. Turn on and let process around 10-15 minutes, occasionally scraping the sides down, every minute or so. As you continuously process the shavings they will break down to start to form paste, keep letting it break down until it is almost liquid. Once it is fairly thinned out and pasty, add the coconut oil to make thinner, a little at a time, until it is thin enough to thickly pour (you may not need all of the oil). You know it is done when it looks like the picture below. 
  4. Add the 1 tsp of Matcha Powder and mix until it is well incorporated.
  5. Dip your strawberries into the matcha coconut butter until well coated and place on a plate with tin foil.
  6. Decorate with the reserved shredded coconut
  7. Place in freezer for 10 minutes and enjoy! (Store in refrigerator)
