If you follow me on social, than you know I am a HUGE Barukas fan. If you don’t know what Barukas are, they are a nut/seed that is considered a superfood. It has the highest fiber of any nut, more antioxidant power than any nut, and 6 grams of protein per serving. But more importantly, its tastes amazing! I used to be a huge peanut butter fan, but since going Paleo I have given up peanut since they are a legume. It wasn’t until I had Barukas that I felt like I was eating peanuts again, so I knew I had to make it into a butter. It honestly is my new favorite nut butter, it is similar to peanut butter, with a touch of hazelnut.

Ingredients:

  1. 2 cups of Barukas
  2. 1/4 cup melted coconut oil
  3. 1 tsp vanilla extract or vanilla powder
  4. 1/2 tsp cinnamon

*You will need a food processor for this recipe. I personally use a cuisineart and it works great!

Instructions:

  1. Place the Barukas in the food processor and turn on, letting it run. After a few minutes you may need to scrape the sides and break up the mixture, it will start becoming chalky and a solid mass. Keep breaking up the mass and scraping the sides for around 5 to 10 minutes.
  2. Once it becomes a ball and wont be broken up further, add half of your 1/4 cup of coconut oil and continue to process, thinning it out.
  3. Once it is more of a butter consistency add your vanilla, cinnamon, and remaining oil and pulse until well mixed and smooth. If you would like it thinner, add a little coconut oil at a time until the desired consistency is reached.
  4. Store in a mason jar and enjoy! (No need to refrigerate).
