Happy National Avocado Day!!! If you didn’t know it already, today is national avocado day, which gives me a reason to eat more avocados than I already do, (it also means Chipotle is giving away free guac with your order, so it is a great day). Since avocados are one of my favorite foods on the planet, I had to do a bomb recipe using them on their special day! 

If you have never had avocado in desserts you are seriously missing out. Chocolate and avocados are essentially as good as PB&J. I typically keep it simple and just blend up avocado and cacao powder to make a mouse, but I wanted to do something a little more for a dessert. I love truffles, so I thought it would be great to make a healthy version with avocado! The avocado makes for the perfect creamy center, while the cacao, coconut, and collagen are perfect for the sweet flavor and texture! They are super easy to make, no bake, and can freeze and last for weeks! Definitely give it a try to celebrate Avocados in a new way!

 

Ingredients:

Yield: 10 Truffles

  1. 2 Avocados
  2. 1/2 bar of 100% cacao chocolate
  3. 1 scoop vanilla collagen or Primal Kitchen’s Vanilla Coconut Collagen (optional, if you don’t have collagen they are just as good without)
  4. 1 tsp vanilla extract or vanilla powder
  5. 1/8 tsp salt
  6. stevia or maple syrup to taste (optional)
  7. scarce amount of melted coconut oil
  8. 1/4 cup coconut shreds
  9. 1/4 cup cacao powder

*Will need a food processor or blender

Instructions

  1. Melt the chocolate bar in a stainless steel bowl over boiling water so it slowly melts and doesn’t burn. Or carefully melt in a microwaveable bowl, checking and stirring often so it wont burn.
  2. Pit and peel the avocados and place into food processor. Add the melted chocolate and process until it is smooth and creamy.
  3. Add the scoop of collagen, vanilla, and stevia/maple syrup (optional). Pulse a few times until well incorporated.
  4. With a spatula, scrape out the mixture into a bowl and refrigerate 30 minutes.
  5. Put the coconut shreds and cacao powder into separate bowls, these will be used to coat the avocado balls.
  6. Once the avocado mixture is slightly solidified they are ready to form and coat. Lightly oil your hands with coconut oil, this will prevent the avocado mixture from sticking to your hands.
  7. Roll the avocado mixtures into balls and roll with either coconut shreds or cacao. Enjoy as is or freeze them to solidify more and keep them longer!
