Through working at a restaurant and being at culinary school, I have literally made thousands of deviled eggs. I never understood the hype for them since I am repulsed by anything with mayo. So I decided to make a healthy version, using avocados instead of mayo! 

This is a huge crowd pleaser and easy to make! You can also garnish the tops with anything you would like and they will always taste good. Give them a go for the next time you have people over or just want a bomb snack!

Ingredients:

  1. 15 hard boiled eggs
  2. 2 avocados
  3. 1/2 tsp salt
  4. 1 tsp smoked paprika
  5. 2 pieces of crispy bacon for garnishment (optional)

*will need pot of boiling water, ice bath, and ziploc bag

Instructions:

  1. Boil a pot of water and lower the eggs into the water carefully so they don’t crack. Set a timer for 12 minutes. While they are cooking set up an ice bath. Once the 12 minutes are up immediately transfer to the ice bath until cooled throughout.
  2. Peel off the shells and begin slicing the eggs in half. To prevent the yolks from sticking to the knife, wet the knife each time you slice a new egg.
  3. Spoon out the yolks into a bowl and set your whites to the side. Add your two avocados to the bowl, salt, and smoked paprika. Mix with a hand mixer or whisk until smooth. Taste to check the seasoning, adjust accordingly.
  4. With a spatula, scrape the yolk/avocado mixture into a large ziploc bag towards the bottom corner, (we are making a piping bag with it). Cut the corner so there is a nickel size opening where you will squeeze the mixture out. Squeeze out into the egg whites.
  5. Garnish with the crumbled bacon or whatever else you may want! Serve immediately, color will brown after a few hours.
