One of my favorite ways to feed the masses is a Frittata! Today I am going to a potluck and wanted something easy and affordable to bring and knew this was the move. I also cannot get enough of this season’s heirloom tomatoes with basil. The combination is good at any meal and with just about anything. Check this out for an amazing breakfast or party! Super easy and delicious.

Ingredients:

  1. 1 dozen organic free range eggs
  2. 1 heirloom tomato sliced thin
  3. 8 basil leaves chiffinade
  4. 1 tsp salt
  5. 1/2 tsp garlic powder
  6. 3 TB of almond milk

 

 

Instructions:

  1. Preheat oven to 400 F
  2. Blend or whisk the eggs, salt, garlic powder, and almond milk until frothy
  3. Pour into a greased pie pan
  4. Top the eggs with the basil and tomatoes
  5. Bake for 40 minutes, or until the middle is set
  6. Rest 10 minutes and enjoy!
