Happy October and happy fall! Fall is one of my favorite food seasons because of all the amazing squashes like pumpkin, kabocha, delicata, honeynut, and one of my favorites butternut squash! I decided to have my first fall recipe to be one of my favorites, butternut squash soup! I decided to make it even more fall by adding an apple to the soup! With ginger and nutmeg as the main seasonings, this soup will put you in the fall mood!

Ingredients:

  1. 1 Butternut Squash, peeled and cubed
  2. 1 green apple, peeled and diced
  3. 1 yellow onion, diced
  4. 3 cups of chicken stock
  5. 3 tsp salt
  6. 1/4 tsp ground ginger
  7. 1/4 tsp ground nutmeg
  8. ground black pepper
  9. minced parsley (for garnish)
  10. toasted pine nuts (for garnsih)

Instructions:

  1. In a pot over medium heat, in olive oil, saute your onions and apples until the onions are transparent.
  2. Add the cubed butternut squash, chicken stock, and 2 tsp of salt. Simmer for 30 minutes or until the butternut is fork tender
  3. Once fork tender, transfer to a blender and blend until smooth, you can also do this with an immersion blender. Transfer back to pot over stove
  4. Add the last 1 tsp of salt, ginger, and nutmeg. Add a dash of ground black pepper. Taste and adjust season accordingly.
  5. Serve in a bowl and garnish with minced parsley and pine nuts.
