I am currently obsessed with all things garlic. I recently found some of the best garlic I have ever had at the local farmers market and cannot get enough of it. One of my favorite ways to have garlic is to confit it. Confit means to cook slowly in fat. This softens the garlic and gives it slight color that makes it super soft and almost creamy. I store it in mason jars and keep it around to add flavor to dishes, or to even just eat plain!

Ingredients:

  1. 3 heads of garlic, peeled
  2. 1-3 cups of extra virgin olive oil
  3. 1 tsp salt

Instructions:

  1. In a small pot, add the garlic and salt, and add enough olive oil to just cover the garlic.
  2. Bring the mixture up to a gentle simmer/bubble, medium heat.
  3. Let it simmer for 15-20 minutes, stirring occasionally so the garlic doesn’t stick.
  4. Once the garlic is fork tender turn off the heat. Store in glass bottles in the refrigerator or mason jar and store indefinitely!
