My favorite bread hands down is banana bread, especially when its Paleo. Let’s be honest, banana bread is one of the few Paleo breads that doesn’t taste like cardboard! When I am craving sweets or just bread in general, Paleo banana bread always comes to the rescue.
I decided to mix up my banana bread by making a Cinnamon Apple Banana Bread and WOW it tastes like dessert for breakfast! The bananas are subtle, but great for added moisture and natural sugars. Try this out for a great change to your typical banana bread!
Ingredients:
- 2 TB coconut oil, seperated in half
- 2 granny smith apples, peeled and small diced
- 1 tsp cinnamon
- 1 cup almond flour
- 1/4 cup coconut flour
- 1 tsp baking soda
- 1/4 tsp salt
- 2 and 1/2 ripe bananas
- 2 TB almond butter
- 3 eggs
- 1 tsp vanilla
Instructions:
- In a saute pan, saute your apples in 1 TB coconut oil until soft, add the cinnamon towards the end and reserve in bowl.
- Preheat oven 350F
- Whisk your almond flour, coconut flour, salt and baking soda in a small bowl.
- In a separate larger bowl whisk your wet, bananas, eggs, 1 TB coconut oil, almond butter, vanilla, and half of your sautéed apples until combined.
- Add your dry to your wet until well combined.
- Pour into a greased bread pan, top with the remaining apples.
- Bake for 45-55 minutes, until a toothpick comes out clean.
- Let sit 15 minutes before slicing and enjoy! Store in your refrigerator for maximum freshness.
