Lately I have been having a strong sweet tooth, but instead of turning towards all of bad sugary items I have been making healthy “sweets” to satisfy the craving. This Banana Cream Chia Pudding has been my go to for when I am wanting something sweet. It is the perfect breakfast, dessert or snack, and it literally only takes 5 minutes to make. Try it out for a great Vegan, Paleo, Gluten Free, and Dairy Free treat!
Ingredients:
- 3/4 cup chia seeds
- 2 cups of full fat coconut milk
- 1 TB maple syrup, omit if you want it to be sugar free
- 2 tsp vanilla extract
- 1 banana mashed
- 1/4 tsp salt
Instructions:
- In a bowl mix all of the ingredients, making sure it is well combined and the banana is thoroughly mashed.
- Put in an airtight container and refrigerate overnight.
- In the AM it should be thick and set, enjoy it with toppings like more bananas, shredded coconuts, nuts and fruits.
