I have been making a ton of new recipes lately since I have been so inspired by all of the great food I have been eating. I recently have been very into shrimp, but get bored with my usual method of sautéing with seasonings. So I came up with an idea for Shrimp Fritters, except ones that aren’t deep fried and filled with gluten.
It took a few tries to get these right, but once I did I could not stop eating them. With Asian ingredients like ginger and green onions, they make boring shrimp extremely flavorful. The cassava flour that is used also gives the shrimp the fritter texture that you would get from a normal fritter.
I paired the fritters with my Sweet Chili Sauce, making a perfect combination. I am not sure what I like better, the sauce or the fritters. Either way they are perfect for a dinner or small bite appetizer for an event!
Ingredients:
Shrimp Fritters:
- 1 lb of shrimp
- 6 green onions thinly sliced
- 1 TB of minced ginger
- 1 tsp of salt
- 1 tsp curry powder
- 1 tsp coconut aminos
- 1 TB sesame oil
- 1/4 cup of Cassava flour
*Will need food processor and 1 oz ice cream scoop
Sweet Chili Sauce:
- 1/2 cup of White Wine Vinegar
- 2 tsp of minced garlic
- 2 tsp of minced ginger
- 1 TB crushed red pepper flakes
- 3 TB of honey
- 2 tsp of arrowroot
Instructions:
- Preheat oven to 400F
- Add your raw shrimp to the food processor and turn on until smooth.
- Add your green onions, ginger, cilantro, salt, curry, coconut aminos, and sesame oil. Pulse until well mixed and place mixture into mixing bowl.
- Add cassava flour to the shrimp and mix with a spatula.
- On a greased baking sheet scoop out your shrimp mix with an ice cream scoop, making sure there is space between each fritter. Bake for 25 minutes.
- While they are baking you can make your sweet chili sauce. Simply put all of the chili sauce ingredients into a sauce pan over medium-high heat and bring to boil, whisking to make sure the arrowroot breaks down. Once it is boiling and mixed turn off the heat.
- Serve the fritters alongside the sweet chili sauce and green onion garnish and enjoy!
