Avocado mousse has always been a favorite of mine. Whenever I have an Avocado that is about to turn, I immediately make it into a mousse and store in the freezer to make it last longer. But ever since my culinary friend, Gabbey, featured an avocado mousse on our school’s restaurant dessert menu, I could not get enough of it in this form. Instead of just the standard avocado and cacao, I made this a protein version, so you aren’t only getting all the healthy fats, but also healthy proteins.

This Protein Avocado Mousse has a perfectly smooth texture that is rich and delicious, while also being light since it’s main ingredient is just avocado. It is a perfect nighttime snack, but pretty much great any time during the day.

Ingredients:

  1. 2 avocados
  2. 1 scoop of vanilla collagen
  3. 2 TB of cacao powder
  4. 3 tsp of maple syrup
  5. 1/8 tsp salt
  6. garnish: micro-planed 100% chocolate

Portion: 2 people

Instructions:

  1. Add your avocados to a food processor and process until smooth, scraping the sides when needed.
  2. Add the rest of your ingredients, minus the micro planed chocolate, blend to smooth. You will need to scrape the sides to make sure it is all incorporated.
  3. Taste and adjust seasoning if desired.
  4. Scoop out into a bowl and refrigerate to set to mousse texture- around 1 hour.
  5. Microplane chocolate shavings over top and enjoy!
