One of my favorite products at Trader Joes is their Cauliflower Gnocchi. Not only is it Paleo and made with healthy ingredients, but the quality cannot be beat by other healthified gnocchis on the market.

One of my favorite kids food was the Auntie Anns cinnamon pretzels. I haven’t had anything semi close to these since becoming healthier and gluten free until I started making cinnamon roasted Cauliflower Gnocchi. So I figured, why not make it into an Auntie Ann inspired cinnamon  gnocchi heaven, but make it even better by adding healthy coconut icing?! When I did it I realized it not only tastes like an Auntie Ann cinnamon pretzel but also a delicious cinnamon bun. This instantly became a favorite recipe of mine for a little sweet treat that is low sugar, Paleo, and has vegetables.

Ingredients:

Gnocchi:

  1. 1 pack cauli gnocchi
  2. 1 Tb coconut oil melted
  3. 1 tsp cinnamon
  4. ½ tsp Nutmeg
  5. ⅛ tsp Cloves
  6. ⅛ tsp salt

Icing:

  1. 2 cup coconut flakes
  2. Vanilla ½ tsp
  3. 1 tsp maple syrup
  4. 1 tb of melted coconut oil

Instructions:

  1. Set oven to 425F
  2. Mix the cauliflower gnocchi with melted coconut oil, cinnamon, nutmeg, cloves,and salt. Lay in even layer on parchment lined sheet tray. Bake in oven 15 min, flip/shuffle and cook another 15 minutes.
  3. While in the oven, in a food processor, process your coconut flakes until smooth, scrape the sides when needed. Once completely smooth, add vanilla, maple syrup, ad melted coconut oil and pulse to combine. 
  4. Once cauliflower is crispy and cooked through, enjoy topped with your coconut icing!
