One of my favorite dips from Trader Joe’s is their Kale Pesto. It is so hard to find a store bought pesto that is dairy free and actually good, but as usual Trader Joe’s killed it on this product! It is great as a dip, but I also love to use it as a sauce for many things, including this mediterranean salad! This a great cold salad that is light but brings the flavors! But this salad would also work great with any at home made pesto or store bought.

A pesto is simply herbs, nuts, oils, and traditionally cheese. The most common is basil, pine nuts, olive oil, and parmesan. If you’re making a dairy free pesto nutritional yeast is a great substitution.

Ingredients:

  1. 1 whole cucumber medium quartered
  2. ¼ cup halved green olives
  3. 1 cup jarred artichokes
  4. 1 lb cherry tomatoes halved
  5. One red onion julienned
  6. ¼ cup torn mint
  7. ½ Container of TJ kale pesto or any pesto
  8. ½ tsp Salt
  9. 1 tsp Sumac
  10. Pine nuts to garnish

Instructions:

  1. Prep all and mix together in bowl, garnish with pine nuts
