One of my favorite dips from Trader Joe’s is their Kale Pesto. It is so hard to find a store bought pesto that is dairy free and actually good, but as usual Trader Joe’s killed it on this product! It is great as a dip, but I also love to use it as a sauce for many things, including this mediterranean salad! This a great cold salad that is light but brings the flavors! But this salad would also work great with any at home made pesto or store bought.
A pesto is simply herbs, nuts, oils, and traditionally cheese. The most common is basil, pine nuts, olive oil, and parmesan. If you’re making a dairy free pesto nutritional yeast is a great substitution.
Ingredients:
- 1 whole cucumber medium quartered
- ¼ cup halved green olives
- 1 cup jarred artichokes
- 1 lb cherry tomatoes halved
- One red onion julienned
- ¼ cup torn mint
- ½ Container of TJ kale pesto or any pesto
- ½ tsp Salt
- 1 tsp Sumac
- Pine nuts to garnish
Instructions:
- Prep all and mix together in bowl, garnish with pine nuts
