One of my favorite condiments is chili oil. Trader Joes’ new Chili Onion Crisp is a favorite on almost anything, or even better my homemade Chile Oil. But when paired with honey to make an amazing glaze it is a game changer! Paired with homemade pickled raisins, this carrot dish is sure to bring the sweets and heat! It is a perfect throw together side dish during your quarantine!
Ingredients:
- 2 lbs rainbow carrots
- 1/4 cup chili oil or trader joes chili onion crisp
- 3 TB honey
- 2 tsp salt
- 1 Tb olive oil
- Pickled raisins
- ½ cup raisins
- ½ cup apple cider vinegar
- 1 TB pickling spices (such as mustard seeds, peppercorns, star anise, cinnamon sticks)
Instructions
- Preheat Oven 400F.
- In a pot stovetop heat and whisk together chili oil honey and olive oil until melted together and turn off heat.
- Coat carrots in chili honey mixture and salt
- Bake 40 minutes tossing every 20 minutes
- While baking bring apple cider vinegar to boil and add pickling spices.
- Pour over raisins in a bowl and let sit uncovered for 30 minutes.
- Once out of oven plate up and garnish with pickled raisins.
