One of my favorite snacks are homemade protein balls. A lot of protein bars are filled with crap and chemicals, so I think it’s easiest to make my own and know what actually goes into it. These are one of my favorites because they are sweet, salty and packed with nutrients. They are super easy, no cooking involved, just need a food processor!

Ingredients:

  1. 1.5 cups oat flour
  2. 1.5 cups Honey sesame cashews or normal roasted cashews 
  3. 2 TB coconut oil
  4. ¼ cup protein powder or collagen 
  5. ¼ tsp salt
  6. ½ tsp cinnamon 
  7. ¼ cup honey 
  8. 1 tsp vanilla
  9. ½ tsp cinnamon 
  10. ⅓ cup sesame seeds

Instructions:

  1. Make oat flour by pulsing oats in food processor until smooth. Set aside.
  2. In same food processor add you honey sesame cashews and turn on, blend until it forms a creamy butter. You will have to scrape down the sides and break up multiple times. At end add 1 TB coconut oil to make smoother and blend.Hold to side. 
  3. Add oat flour, protein powder, salt, and cinnamon and pulse to combine.
  4. Add the cashew butter back in with maple syrup and vanilla and one more TB of coconut oil and blend to smooth.
  5. Form into balls and roll in sesame seeds.
