One of my favorite childhood sweets were chocolate chip cookie brownies. I hadn’t had them in years, because I used to just make with boxed mixes and it would be so easy. Now that I eat Paleo, it is much more difficult to make Paleo baked goods. But now that there are way more Paleo baking mixes on the market it is easy to make these short cuts. So I used Trader Joes Paleo chocolate chip cookie mix in combination with my Paleo brownie mix and it was killer! Only takes a few minutes to whip up and tastes as good as my childhood favorite ones I remember so well!

Ingredients:

Brownie Batter Ingredients:

  1. ¾ cup unsweetened cacao powder
  2. ½ cup almond flour
  3. 1 tsp baking soda
  4. 1 tsp kosher salt
  5. ½ cup almond butter
  6. ½ cup coconut sugar or sugar of choice
  7. 1/4 cup maple syrup
  8. ¼ cup melted coconut oil
  9. 2 eggs room temperature 
  10. ½ cup chocolate chips

Chocolate Chip Cookie Ingredients:

  1. Any paleo chocolate chip cookie box mix or recipe of your choosing. I used the Trader Joe’s Paleo cookie mix!

Instructions:

  1. Preheat oven 350F.
  2. First create brownie batter. Mix your dry and in a separate bowl mix your wet ingredients.
  3. Slowly add your dry ingredients to wet while mixing. Lastly, mix in your chocolate chips and set aside. 
  4. Make your cookie batter. Take out dry mix and add oil, then mix in vanilla and almond milk.
  5. Spray an 8×8 pan and pour brownie batter. Next place cookie dough all throughout the brownies and press them in.
  6. Bake 40 minutes, test with fork and if it comes clean it is done. Let sit 10 minutes before cutting.
