One of my favorite Middle Eastern dishes is Shakshuka. Traditionally it is made with eggs, however I have been really loving chickpeas lately and have found this is a great Vegan substitute! Try it out to spice up your next breakfast or meal!

Ingredients:

  1. Olive oil
  2. 1 red bell pepper, julienned
  3. 1 yellow bell pepper, julienned
  4. 1 yellow onion, julienned
  5. 1 cup canned crushed tomatoes
  6. ½ cup vegetable stock
  7. ½ tsp coriander 
  8. 1 tsp paprika
  9. 1 tsp cumin
  10. 1 tsp Salt
  11. 1 can chickpeas, leave liquid
  12. Cilantro to garnish

Instructions:

  1. In a large saute pan over medium heat, add olive oil and saute red bell pepper, yellow pepper, and onion. Saute until soft and caramelized, around 20 minutes. Salt as you go, around ½ tsp of salt.
  2. Add your crushed tomatoes and stock and bring to simmer, add seasonings and ½ tsp salt and stir. 
  3. Add your chickpeas and let simmer 10 minutes. 
  4. Check the seasoning and adjust accordingly. Once it is done garnish with cilantro.
