It is finally September, which means I have begun cooking all of the fall foods! One of my favorite ingredients to use in the fall are apples! Growing up my family and I would go to apple orchards and eat apple cider donuts every fall. Since I no longer eat gluten, and therefore most donuts, I use the same great apple cider flavors and make my own treats with them that are much healthier. This is the first of many apple treats to come and it is a great way to kick off your fall!

Ingredients:

  1. ⅓ cup melted coconut oil
  2. 2 tbsp chia seeds soaked in 5 tbsp water (to make chia egg)
  3. ½ cup apple cider spread from trader joes (or maple syrup)
  4. ½ cup apple sauce
  5. ½ cup coconut sugar
  6. 2 cups almond flour
  7. ½ cup tapioca or arrowroot flour
  8. 2 tsp baking soda
  9. 2 tsp cinnamon
  10. ½ tsp salt

Crumble Topping Ingredients:

  1. 1/2 cup almond flour
  2. ½ cup tapioca flour / arrowroot
  3. 1 tbsp cinnamon
  4. ¼ tsp salt
  5. 3 tbsp melted coconut oil
  6. ¼ cup coconut sugar

Instructions:

  1. Preheat oven 350*F
  2. In a bowl, mix together coconut oil, soaked chia seeds, apple cider spread, apple sauce, and coconut sugar. 
  3. In a separate bowl mix the almond flour, tapioca flour, baking soda, cinnamon, and salt. While mixing, add the dry to the wet ingredients. 
  4. Pour into an 8×8 greased pan and bake for 15 minutes. While baking in a bowl, mix the crumble toppings with  your hands, it should be crumbly. After 15 minutes, add to the coffee cake and return to the oven for another 20 minutes.
  5. After the next 20 minutes, check the center with a fork. If you remove and it is clean, it is done. Cool on the counter and enjoy!
