Pumpkin spice everything isn’t basic, and neither is this simple pumpkin spice granola! I always make my own granola, because store bought granola is usually filled with sugar, soy, gluten, and other crap. Not only is this gluten free, but it is also refined sugar free, dairy free, and delicious! If you are a pumpkin spice fan, this granola is is a must!

Ingredients:

  1. ½ cup raw almonds
  2. ½ cup raw pumpkin seeds (pepitas)
  3. 2 cups gluten free oats – sprouted are best 🙂
  4. ¼ cup pumpkin puree
  5. ¼ cup maple syrup
  6. ¼ tsp salt
  7. 1 tbsp pumpkin pie spice

Instructions:

  1. Preheat oven to 350*F.
  2. In a food processor or blender, add your almonds and pumpkin seeds. Pulse until coarsely chopped, but not too small.
  3. Add the everything in a mixing bowl. Mix with a spatula to make sure everything is incorporated. 
  4. Add parchment to a sheet tray and pour your granola into a flat, even layer. Place in the oven and roast for 10 minutes. After 10 minutes check to see how it is looking, if it is golden brown and crispy, pull it out. If not, place in the oven for another 5 minutes. Remove once golden brown.
  5. Cool for 20 minutes then store in an airtight container. Enjoy with your favorite yogurts, dessert, fruit, etc.
