One of the struggles of eating chicken breast is that its typically boring AF. For the longest time I HATED chicken breast because it was so dry and flavorless. I only started to enjoy it when I learned how to cook it right and make great marinades / sauces for it. The keys to a perfect chicken breast are:
- DON’T overcook it – I cook my chicken breast until it reads 155*F on a meat thermometer. This keeps it super moist! BUY A MEAT THERMOMETER.
- Marinate it overnight or for a few hours – I like marinades with citrus, peppers / chilis, seasonings, oils, coconut milks, and fresh fruit, like this recipe.
- Don’t be afraid to season – use a fair amount of salt and let it soak in a few hours / overnight to really take in the seasoning.
This recipe is the perfect combination of all three of these tips, so you will never have to eat a boring chicken breast again!
Ingredients
Portions: 4
- 4 chicken breasts
- Salt to coat, plus 1 tsp for sauce
- 2 cups cubed mango (can use fresh, or frozen that has been defrosted)
- 3 chipotle chilis in adobo (can buy these canned)
- Juice from 1 lime
- 1/4 cup water
- 1 tsp chili seasoning
- Cilantro for garnish
Instructions:
- Salt your chicken breasts on each side, and reserve to the side.
- In a blender, blend together mango, chipotle chilis, lime juice, water, chili seasoning, and 1 tsp of salt. Blend until very smooth.
- Add half of the mango chipotle blend to the chicken and marinate 2 hours, or overnight. Save the remaining sauce in a container for service.
- Turn a grill pan on high, or grill on high. Grill your chicken on each side for 5-8 minutes, making nice grill marks and flip. Cook on the remaining side until cooked through, when internal temperature reaches 155*F.
- Rest for 5 minutes and serve with mango, cilantro, and remainder of sauce!
