Try this grilled chicken satay with Thai sriracha dipping sauce to spice up your weeknight dinners!

Ingredients:

Chicken Ingredients:
2 lb boneless skinless chicken thighs
2 tsp coconut aminos
1 cup coconut milk
1/2 tsp garlic, minced
1 tsp fish sauce
1/2 lime, juiced
3 tsp curry powder
1 tsp ground turmeric
1/2 tsp salt

Dipping Sauce:
1/4 cup sunflower seed butter
3 tbsp sriracha
2 tbsp coconut aminos
2 tbsp water
6 green onions, sliced thinly

Preparation:

STEP 1.

Salt the chicken thighs on all sides and place in a bowl.

STEP 2.

In another bowl, mix the remainder of the chicken ingredients with a whisk. Add to chicken and marinate 1 hour or overnight.

STEP 3.

While that marinates, combine your sauce by whisking all together, set aside for service.

STEP 4.

Turn a grill / grill pan on medium high and grill chicken on one side for 5-8 minutes, until you have nice marks, flip and finish cooking through. Pull chicken off once internal thermometer reads 165*F.

STEP 5.

Serve with sriracha sauce and green onion garnish!
