One of my favorite sauces to have in the fridge is romesco! Romesco is a Spanish sauce that is made from roasted red tomatoes / or roasted red peppers, toasted nuts, and olive oil. In my recipe I use jarred roasted red peppers, tomato paste, and almonds to make a flavorful sauce that is great for dipping or with chicken or fish. I almost always have some in my fridge that helps brighten just about any meal.
Try out this romesco sauce to elevate your weeknight dinners or lunch salads!
Ingredients:
2 | 12 oz jars of roasted red peppers | 1/2 | onion, chopped | 2 | garlic cloves, minced | 1 | tsp ginger, minced | 1 | cup roasted slivered almonds | 3 | lemons, juiced | 2 | tbsp tomato paste | Olive oil, as needed | salt and pepper to taste |
Preparation:
STEP 1.
Drain roasted red peppers from their liquid and add to the blender.
STEP 2.
In a pan over medium heat, add olive oil to coat the pan. Saute onion and garlic until translucent and cooked through, around 5 minutes. Add to the blender.
STEP 3.
Add the toasted almonds, lemon juice, tomato paste and olive oil to cover everything. Blend until smooth. If you need more oil, add just enough to blend. Season with salt and pepper to taste.
STEP 4.
Enjoy or store in the fridge!
