The French omelette is one of the best omelettes in the world, and one that is intimidating to make. Once you practice though, it is quite easy to master and impress anyone you are cooking brunch for!
All you need is eggs, butter, and a little technique. Watch these steps, take a few eggs, and practice for brunch this weekend!

This version is the plain version, but you can always add cheese, herbs, etc to it as well. The French omelette is technically just butter and eggs, but feel free to spice it up!
Ingredients:
- 2 large eggs
- salt
- 3 tbsp butter or clarified butter
Preparation:
STEP 1.
Whisk the eggs for about 1 minute, until a lot of air is incorporated. Add a dash of salt.
STEP 2.
In a non stick pan over medium heat, add a tablespoon of butter. Once melted add the eggs and begin scrambling. Do this by shaking the pan with one hand, and making circular motions with a rubber spatula. Do this until you can no longer shake the pan and the eggs move easily.
STEP 3.
Turn the heat to low and begin flattening the loose eggs to areas of the pan where they are scarce. So they look scrambled, but you are making the flat omelette in the pan. Once the eggs are covering the surface and not too runny. Turn off the heat.
STEP 4.
Begin rolling the omelette with a rubber spatula and hand if needed. Once you have the first roll add butter to the pan so it can sneak under the egg and help lubricate the roll. Once you get towards the end of the pan, fold the opposite side onto the roll so the seem is on top. Make sure the butter is melting and tuck it under the omelette.
STEP 5.
Move the omelette towards the end of the pan and plate it by rolling it onto the plate, so the seem faces down. You should have a glistening omelette. Add the last tablespoon of butter and rub the top of the omelette so it shines! Top with your favorite garnish and enjoy!
