Before culinary school I didn’t know how to properly dice an onion. The key to perfectly square onions is the horizontal cut! This makes for better dicing, and therefore more even cooking.

There are no tricks to not crying, except for a sharp knife and a fresh onion. The older the onion, the more painful it is to cut. Also, if your knife isn’t sharp, it tends to crush the onion more than slice through it, which makes more of the particles release that make your eyes water.

This takes a little bit of practice to get the hang of, but trust me once you cut an onion like this you will not go back to the old way! Make sure your knives are nice and sharp for easy horizontal cut!

Ingredients:

  • 1 onion

Preparation:

STEP 1.

Cut the non root side off of the onion and then slice in half through the root. Peel the outer layer off.

STEP 2.

Have the onion facing your cutting hand and do horizontal plank layers, 1/4 of an inch for small dice. Go to the root, but not through it. Keeping the root in tact will help hold the onion together.

STEP 3.

Turn the onion to face you (cut side facing you), and slice 1/4 inch columns vertically down, but not through the root.

STEP 4.

Turn it back to facing your cutting hand, and slice 1/4 inch columns vertically through, making the diced onions.
