This is my favorite way to cook carrots – stovetop braising! This method is really easy and creates a sweet and savory glazed carrot.

Try this out for an easy side dish. It goes great with roast chicken, white fish, and roast beef!
Ingredients:
- 3 tbsp butter, cubed
- 1 lb carrots, peeled and oblique cut
- 1/3 – 1/2 cup maple syrup
- 5 sprigs of thyme
- 1/2 cup chicken stock or vegetable stock
- salt and pepper to taste
Preparation:
STEP 1.
In a large pan over medium heat, melt the butter and add the carrots, thyme and salt. Cover the pan with a lid or foil, and steam the carrots for 3 – 5 minutes.
STEP 2.
Remove the lid and add the maple syrup and chicken stock, just enough to where the carrots are half submerged in liquid. Bring to a simmer and cover the pan for another 5 minutes. Make sure to salt as you go.
STEP 3.
Uncover and let the carrots simmer, reducing the liquid until it is completely dry and syrupy consistentency, around 10 -15 minutes.
STEP 4.
Remove any of the thyme sprigs and enjoy!
