There are two keys to perfect oven chicken wings. First, air drying overnight in the fridge. This allows water to evaporate and skin to tighten. Second, using baking powder in the rub makes for the crispiest wings!

The combination of the Truff hot sauce, ghee, and honey in the sauce, makes for the best sweet and spicy chicken wings!
Ingredients:
- 3 lbs chicken wings
- salt
- 1 tbsp baking powder
- 2 tsp garlic powder
- 1 tsp smoked paprika
- 1 tsp pepper
- avocado oil spray
- 1/4 cup Truff hot sauce
- 1/4 cup butter or ghee
- 1 tbsp honey
Preparation:
STEP 1.
Line a baking sheet tray with foil and place a baking rack on top. Put your wings in an even layer and salt. Place in the fridge, uncovered, overnight to dry out.
STEP 2.
The next day, preheat the oven to 425*F. In a bowl mix the baking powder, garlic powder, smoked paprika and pepper.
STEP 3.
Remove the chicken from the fridge and place the chicken in a large bowl and coat with avocado oil. Coat with the baking powder mixture and then place the wings on an even layer on the baking rack. Roast in the oven for 40 minutes. Remove and flip the wings over, roast for another 10-15 until crispy.
STEP 4.
While your wings are roasting, make the sauce by adding the butter / ghee to a pot, along with the hot sauce and honey. Bring to a simmer and whisk. Set aside.
STEP 5.
Remove the wings and place in a large bowl. Coat with the hot sauce mixture and plate up! Serve with your favorite dipping sauce and enjoy!
