If you have trouble finding tomatillos at your local grocery store, I would recommend looking up a Mexican market, they will always have them! Stores near me that have them are Mexican grocery stores, Sprouts, Ralphs, and Whole Foods.

This is a super easy salsa recipe that is always super popular. All you have to do is roast everything in the oven and then blend!
Ingredients:
- 2-3 lbs tomatillos
- 2 white onions, large diced
- 2 heads of garlic, tops cut off
- 3 jalapenos, sliced in half, seeds kept in if you want it spicy (can use serranos for more spice)
- olive oil
- salt
- 1/2 bunch of cilantro
- 2 tbsp cumin
Preparation:
STEP 1.
Preheat the oven to 425*F.
STEP 2.
Remove the husks from the tomatillos.
STEP 3.
Wrap the garlics in foil and add olive oil to the cloves.
STEP 4.
Place all of the ingredients on a baking sheet and coat lightly with oil. Roast in the oven until everything is golden and soft, around 45 minutes.
STEP 5.
Blend everything, including salt, cilantro and cumin until smooth. Taste for flavor and adjust seasonings as necessary. Enjoy or reserve in the fridge for up to a few weeks.
