This healthier mousse is my go to for a rich dessert that is good for you. The avocado makes it super creamy while also feeling light. Instead of sugar we use maple syrup to sweeten, and the raspberries cut through the richness for perfect balance.

This version is the plain version, but you can always add cheese, herbs, etc to it as well. The French omelette is technically just butter and eggs, but feel free to spice it up!

Ingredients:

  • 4 ripe avocados
  • 1/4 – 1/2 cup peanut butter to taste
  • 1/4 cup cacao powder
  • Melted 100% chocolate bar
  • 1/2 cup maple syrup
  • dash of vanilla
  • Salt to taste
  • 1 package of frozen raspberries
  • honey or maple syrup to taste for raspberries
  • cacao nibs for garnish

Preparation:

STEP 1.

Blend everything minus the frozen raspberries. If you are having trouble blending you can always add more maple syrup or water.

STEP 2.

In a pot, simmer raspberries and honey or maple syrup to taste for 10-20 minutes until thickened. Set aside and cool.

STEP 3.

Add the avocado mix to a piping bag or ziploc bag and pipe layers of avocado mousse, raspberry compote, and cacao nibs into a mason jar or serving container. Refrigerate for up to a week, or enjoy!
