This jam is great on burgers, salads, or just for snacking! It is the perfect balance of spicy and sweet.

Ingredients:

  • 4 onions, mandolined thin
  • olive oil
  • salt
  • 1 can chipotle in adobos
  • 1/4 cup honey
  • 1/4 cup apple cider vinegar

Preparation:

STEP 1.

In a large pan over medium heat, add olive oil to coat and caramelize your onions. Do this by slowly sautéing the onions on low heat. Salt as you go. If parts of the pan get too dark, then add a splash of water. You can see a full detailed video on how to caramelize onions here. It should take around 20-30 minutes.

STEP 2.

While the onions caramelize, add all of the chipotles in adobo to a blender and blend until smooth.

STEP 3.

In a bowl, mix 1/4 cup apple cider vinegar, 1/4 cup honey and 1-2 tbsp of the chipotle mix. Mix together until well combined.

STEP 4.

Once the onions are browned, add the honey chipotle mix to the onions. Stir in and simmer another 5 minutes until the liquid reduced.

STEP 5.

Enjoy immediately or store in the fridge!
