Tostones are an amazing South American / Caribbean way to prepare green plantains. If you have never tried green plantains before, give this recipe a shot! It is very easy and a great way to try something new at home.

Tostones go great with a Mojo dipping sauce. Pair it with flavors from the Caribbean or South America!
Ingredients:
- 4 plantains
- salt
- Avocado oil
Preparation:
STEP 1.
Pour the oil into a large dutch oven of skillet. Bring up to 350*F.
STEP 2.
Prep the plantains – trim off both ends and make slices down the plantain and peel off the skin. Slice into ½ inch thick rounds.
STEP 3.
Line a baking sheet with a wire rack. Work in batches fry plantains, flipping occasionally to make sure they don’t stick. Fry until golden, around 2 minutes. Using a fish spat, transfer to a baking sheet. Reduce the oil heat to low while you do the next steps.
STEP 4.
Using a meat mallet or flat pot, place pans on cutting board and firmly press down on the plantain to flatten to ¼ inch thickness – do this while warm if possible.
STEP 5.
Reheat oil to 375*F, working in batches, fry the plantains until golden brown and crisp – around 3 minutes. Transfer to a wire rack and immediately salt and serve!
