Making your own aioli takes your sauces and meals up to another level. It is super simple, you just need egg yolks, garlic, salt, dijon mustard oil and a splash of lemon.

Since this recipe uses raw egg yolks, it is best if you use this aioli within 5-7 days and store in the fridge! And yes you can eat raw egg yolk you will be okay just buy high quality eggs 🙂

Ingredients:

  • 2 egg yolks
  • salt
  • 1 garlic clove, grated
  • 1 tsp dijon mustard
  • 1/2 cup to 1 cup avocado oil
  • splash of lemon

Preparation:

STEP 1.

Add the yolks, salt, grated garlic and dijon mustard to a container that you can use with an immersion blender. Mix prior to adding oil.

STEP 2.

Add your immersion blender and begin mixing, slowly add oil, a drizzle at a time to emulsify and then add more. Slowly adding oil allows the oil to mix with the yolks without the sauce “breaking.” Keep blending in the oil until the aioli is very thick.

STEP 3.

Finish the sauce a squeeze of half a lemon and serve or store in the fridge.
