It is a fact that rotisserie chickens are far superior than normal roasted chickens. The reason for that is 1. they are cooked on a spit that rotates, so the fat melts into itself as it rotates, making it very moist and flavorful &. 2. It is cooked at a lower temperature typically, which insures it won’t dry out.

You can also do this via oven to taste just like a rotisserie chicken. To do this you just cook your bird in a temperature often. So follow all the below steps, but instead of an air fryer, set your oven to 300*F and roast the chicken for 2-3 hours, until the internal temp reaches 160*F. Make sure to baste with olive oil or butter every 30 minutes!

I use my go to chicken spice trifecta here, smoked paprika, dried oregano and garlic powder to to make the most flavorful chicken!

Ingredients:

  • 1 chicken or cornish hen, under 2.7 lbs
  • Olive oil
  • Salt to coat
  • 3 tsp smoked paprika
  • 3 tsp garlic powder
  • 3 tsp dried oregano

Preparation:

STEP 1.

Pat your chicken dry with paper towels. Coat your chicken with olive oil all over. Salt all over and coat evenly in smoked paprika, garlic powder and oregano.

STEP 2.

With butcher’s twine, truss your chicken very tightly. Here is a video on trussing in case you have never done it before.

STEP 3.

Secure the chicken onto the spit, making sure it is in the middle of the rod. Transfer to the rotisserie and turn it onto the rotisserie setting at 430*F for 30 minutes. (if you want to do the oven version look above in my first 3 paragraphs to see how to do it via oven)

STEP 4.

After 30 minutes, with a meat thermometer temp the chicken, the breast should be 160*F, the thighs should be 160-175*F. Remove the chicken and let it rest for 10 minutes if it is done. If it needs more time, continue for 5-10 more minutes, or until the chicken reaches the proper temperature.

STEP 5.

Remove the chicken from the spit and break down and enjoy!
