Shrimp scampi is a great Italian American dish that is super simple to make as long as you know how to make a quick white wine butter emulsion. Follow this recipe video to see a step by step of making the shrimp and sauce.

You can eat shrimp scampi as just the shrimp, with bread, or pasta. I typically eat it by itself since I am not a big pasta person, but the sauce is great soaked up in bread or pasta!

Ingredients:

  • 1 lb shrimp, cleaned
  • salt
  • 10 garlic, minced
  • olive oil
  • crushed red pepper flakes
  • 1/2 cup dry white wine
  • 5-8 tbsp unsalted butter
  • squeeze of half a lemon
  • minced parsley for garnish

Preparation:

STEP 1.

Salt your shrimp and coat in about half of the minced garlic. Set aside for 15 minutes.

STEP 2.

In a pan over medium heat, add olive oil and once heated add the shrimp. Saute on both sides for around 2 minutes to get some color and remove, set aside. The shrimp will not be cooked through, we are just looking for some color and the garlic to be partially cooked.

STEP 3.

In the same pan over medium heat add a small amount of butter, the remaining garlic and 1-2 tsp of red pepper flakes. Saute until fragrant, around 2 minutes, and then add the white wine to deglaze. Reduce the white wine to a nappe – very thick.

STEP 4.

Add 5 tbsp of cubed butter and with a spatula or whisk, stir the butter into the wine mixture. By shaking the pan and stirring with a spatula, it will help emulsify the sauce. You will know it is properly emulsified when it looks smooth, glossy and thick. To thicken, add a few more cubes of butter and reduce slightly.

STEP 5.

Once the sauce is thickened, add the shrimp back to the pan and cook through, another 3-4 minutes. Top with parsley and serve.
