Grilled chicken is a staple in many kitchens, but can often be overcooked and bland. There are a few keys to making sure your chicken is moist and flavorful.

First, I always like to marinate for a few hours, or ideally, overnight. This helps both with flavor and moisture. Make sure your marinade has some acid, fat and seasonings / flavorings, and always salt!

Second, make sure your grill is hot enough to make good grill marks and the char you are lookin for. Wait for the grill to heat up, you will know it is hot enough when you can only hold your hand over it for a few seconds because of the heat.

Lastly, use an internal meat thermometer to know when the chicken is done. If you don’t have a thermometer you are likely to overcook it. Pull chicken breasts off the grill at 160*F.

As for grills, I have a couple different kinds. I love my charcoal grill, but it can be a hassle to set up and clean. A gas grill is also great because of the ease of use. It doesn’t have as good of a taste because there is no charcoal, but it is still great. I also love my indoor grill pan and electric Cusimax grill for when I don’t want to grill outside. This is a simple fajita marinade that makes for flavorful Mexican inspired chicken. I love to serve it with cilantro, bell peppers, and other South West foods.

Ingredients:

  • 1 lb chicken breasts
  • 2 limes, juiced
  • ¼ cup olive oil
  • 2 tsp chili powder
  • 1 tsp salt
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp cumin
  • Cayenne to taste

Preparation:

STEP 1.

Add chicken breasts to a Ziploc bag.

STEP 2.

In a bowl, mix together the remainder of the ingredients, whisking to combine. Add marinade to the Ziploc bag, seal it and evenly coat the chicken. Marinate in the fridge for 4-24 hours.

STEP 3.

Heat the grill to medium high heat, or if you are using the Cusimax electric grill, heat to 400*F. Once it is hot spray with high smoke point oil and add the chicken. Cook the chicken until it has nice grill marks on the first side, then flip, around 5 minutes. Cook on the second side until cooked through, around 5 more minutes or until the meat thermometer reads 160*F.

STEP 4.

Let the chicken rest 5 minutes, then enjoy!
