Shepard’s pie is an ultimate comfort food. A traditional shepard’s pie is a dish of ground beef or lamb mixed with vegetables and topped with mashed potatoes and cooked like a casserole. I decided to lighten it up with low carb Palmini Mash instead of potatoes!
I have recently come across Palmini and have become obsessed. They use hearts of palm to make mashes, spaghetti, linguine and rice alternatives. Hearts of palm is a vegetable that is common in South America. It has a pretty neutral taste, is nutrient dense, and is very low carb. The fact that they can make this into pasta and rice alternatives that actually taste good kind of blew my mind. I really feel like hearts of palm is going to be what cauliflower was a few years ago! Substituting out the potatoes for the Palmini Mash has a very similar texture and flavor, but is much more nutritionally dense and low carb. If you follow the keto diet, this alternative to Shepard’s pie is for you!

I love this dish because it is an all in one casserole, you really do not need sides, it is filling and has protein, fat and veggies!
Ingredients:
- Avocado oil or oil of choice
- 1/2 onion, chopped
- 5 carrots, chopped
- 1 celery rib, chopped
- 1 lb ground beef
- 4 garlic, minced
- 1 tbsp Italian seasoning
- 1 tsp smoked paprika
- 1 tsp rosemary dried
- 1 tbsp GF flour or AP flour
- 2 tbsp tomato paste
- salt and pepper to taste
- 1/2 cup beef of chicken broth
- 2 packets of Palmini Mash – use code “CLEANKITCHEN” for 10% off Palmini
- 1/4 cup melted ghee, butter, or olive oil
Preparation:
STEP 1.
Preheat the oven to 400*F.
STEP 2.
In a large pot over medium heat, add oil. Once warmed, saute the onions, carrots and celery, salting as you go. Saute until translucent, around 5-10 minutes. Once cooked through, add the ground beef and saute, breaking into small pieces. Saute until browned and cooked through, salt and pepper as you go, around 10 minutes. Once the beef is browned, add garlic, italian seasoning, paprika, rosemary and flour and mix in. Add the tomato paste and saute another 2-3 minutes. Add broth and mix in, simmer for 5 minutes until thickened. Set aside.
STEP 3.
In a bowl, mix together the Palmini Mash with melted ghee or butter. Season with salt and pepper to taste.
STEP 4.
In an 8×8 baking dish, or one of similar size, spray with cooking oil. Add the meat mixture to the bottom of the pan, making an even layer. Top it with the Palmini Mash in one even layer. Transfer to the oven and bake for 25-30 minutes.
STEP 5.
Remove the shepard’s pie once the top has set and is golden. Cool for 10 minutes and serve!
