Teriyaki chicken was always my go to order as a kid. It is still a huge comfort food and super easy to make. This version is a little lighter if you use my teriyaki sauce recipe that is gluten free, soy free and refined sugar free.

This is a great week night one pot meal, super quick and easy to make.
Ingredients:
- 2 lbs boneless skinless chicken thighs, cut into one inch pieces
- salt
- 2-4 tbsp arrowroot powder
- avocado oil
- 1-2 cups teriyaki sauce
- green onions for garnish
- toasted sesame seeds for garnish
Preparation:
STEP 1.
In a bowl, mix the chicken with salt and arrowroot powder all over.
STEP 2.
Heat a pan to medium high heat and add avocado oil. Once heated, add chicken and stir fry. Let one side brown and flip over to brown the other, around 3 minutes per side. Once slightly browned, add the teriyaki sauce, enough to coat all the pieces and simmer for 10-15 minutes until cooked through. Pull the meat once it reaches an internal temperature of 175*F.
STEP 3.
Garnish with sliced green onions and sesame seeds.
The chicken was perfect, but I didn’t realize that I should not use bottled teriyaki sauce. It was the saltiest meal we have ever had! Consider adding your recipe for your sauce to this particular recipe…I would love to have used a homemade sauce rather than bottled had I realized what it was going to taste like. Thank you!
Hi Julie! So glad the chicken was good. In the recipe ingredients the teriyaki sauce is linked to my teriyaki recipe. I recommend you try that the next time! I agree, store bought teriyaki sauces are incredibly salty and I wouldn’t personally use.
