Pickled red onions are incredibly easy to make at home. I always have a container in my fridge because they last forever.
You can even use these pickling ratios to make any pickle of your choice, such as pickled cauliflower, eggs, beets, cucumbers, etc!

Pickled red onions are a great garnish to tacos, salads, etc. Since they are stored in mostly a vinegar mixture, they can last months in the fridge.
Ingredients:
- 1 red onion, sliced thinly
- 3/4 cup apple cider vinegar
- 1/2 cup water
- 1 tbsp salt
- 1 tbsp peppercorns
- 1 tbsp sugar of choice, I used honey here
Preparation:
STEP 1.
Thinly slice or mandolin thin a red onion. Place into a 16 oz mason jar or glass container.
STEP 2.
In a pot, add apple cider vinegar, water, salt, peppercorns, and sugar. Bring up to a simmer, whisk all of the ingredients together, and then take off the heat. Pour into the container with the red onions. Refrigerate.
STEP 3.
After 1 hour in the fridge, your pickled red onions will be ready! Store in the fridge.
