This is part one of my comfort food made light series! I am a huge fan of comfort foods. Who doesn’t love pizzas, creamy dishes, stews, and casseroles?! What I am not a fan of is feeling gross and sluggish because the meal was so heavy. I have been making tons of my favorite comfort foods lighter with easy adjustments and healthier alternatives in recipes, so now I am going to share my favorites with you!
This creamy Tuscan pasta is a favorite of my clients. I have been using this cream sauce for years and it tastes rich and delicious, as if it was really cream. This is a great one pan, weeknight meal that can be made in under 30 minutes!
Ingredients:
- 1 chicken breast, cubed
- salt and pepper
- 3 garlic cloves, minced
- 2 cups almond milk
- 1 tbsp arrowroot powder or cornstarch
- Olive oil
- 2 tsp Italian seasoning
- 1/2 cup sun-dried tomatoes
- 2 cups spinach
- 1 packet Palmini Linguinie
Preparation:
STEP 1.
Cube the chicken breast and add salt all over. Add minced garlic and massage in, set aside.
STEP 2.
Prepare the cream sauce by whisking together the almond milk and arrowroot or cornstarch until smooth, set aside.
STEP 3.
In a pan over medium high heat, add olive oil and saute the chicken and sundried tomatoes. Stir with a wooden spoon and brown, saute for about 5 minutes. Add Italian seasoning and saute another 2-3 minutes.
STEP 4.
Add almond milk mixture, salt and pepper all over, and bring to a simmer. Simmer for 5 minutes and make sure the chicken is cooked through. Add spinach and stir in until wilted, around 1 minute. Add Palmini pasta and stir in for 1 minute to warm. Remove from the heat and enjoy!
