Pesto grilled chicken is one of my client’s favorite proteins! The marinade completely tenderizes the breast and packs it with flavor.
One trick in this marinade is using mayo. Mayo naturally tenderizes the chicken and helps make it super moist. I don’t personally love mayo, however you cannot taste it in this marinade at all and really affects the texture in a great way.
You can use all homemade or store bought items for this marinade and it will work! I will like the homemade recipes for both mayo and pesto!

I cook this both over charcoal or on grill pan, each way is delicious! Love to serve it with Italian sides.
Ingredients:
- 1 lb chicken breast, butterflied into halves
- salt and pepper
- 1/3 cup mayo
- 1/2 cup pesto
Preparation:
STEP 1.
Halve the chicken breast into thin slices and salt and pepper all over. Add to a ziploc bag.
STEP 2.
Mix the mayo and pesto until combined. Add to the bag and massage it into the chicken so all of the pieces are evenly coated. Marinated overnight, or for 3 hours for optimal flavor.
STEP 3.
Turn a grill or grill pan to high heat and oil. Once heated, grill the chicken, around 5 minutes per side. Pull the chicken off the grill once the internal temperature reaches 155*F.
