There are three cuts that you must make for a perfect diced onion. First are the horizontal cuts that are parallel with the cutting board, then two vertical cuts. Most people skip the horizontal cut, but if we skip that cut, we wont have perfectly diced onions, but more of a rectangle shape.

Preparation:
STEP 1.
Cut the non root side off of the onion and then slice in half through the root. Peel the outer layer off.
STEP 2.
Have the onion facing your cutting hand and do horizontal plank layers, 1/4 of an inch for small dice. Go to the root, but not through it. Keeping the root in tact will help hold the onion together.
STEP 3.
Turn the onion to face you (cut side facing you), and slice 1/4 inch columns vertically down, but not through the root.
STEP 4.
Turn it back to facing your cutting hand, and slice 1/4 inch columns vertically through, making the diced onions.
