This is the BEST way to get crispy russet potato fries! By boiling the potatoes first for 5 minutes, it draws out the excess starch that typically prevents oven fries from getting crispy. That step is KEY!

This only works with white potatoes. Sweet potatoes have way less starch and do not need to be boiled first.

These are great both in the oven and air fryer!

Ingredients:

  • 4 russet potatoes, peeled and cut into thick steak fries
  • salt
  • olive oil
  • pepper
  • smoked paprika
  • garlic powder

Preparation:

STEP 1.

Preheat the oven to 415*F.

STEP 2.

Bring a pot of water up to a boil and heavily salt. Boil the potatoes for 5 minutes, then drain and place potatoes into a bowl.

STEP 3.

Coat the potatoes in olive oil, salt, pepper, garlic powder, and smoked paprika. Lay in an even layer on parchment lined sheet tray. Roast in the oven for 20 minutes. After 20 minutes flip them over and roast another 15 minutes. If you want them extra crispy, place them on the bottom level of the oven. Remove once crispy and enjoy!
