I first had a chocolate budino when I was in culinary school and it quickly became my favorite dessert. A chocolate budino is an Italian dessert that is almost like a mix between a custard and a pudding. The texture is silky smooth and it is the ultimate dessert for chocolate lovers.
Another reason why I love this healthy dessert is because it is no bake! I am not the best baker, which is why I love making chocolate budinos, because it takes about 10 minutes to make stovetop.
I have adapted this recipe multiple times to try to get it to be the perfect paleo version. After many times I finally found the right ratios of non dairy milks and less processed sugars.
If you want to make this with cream and real sugar, you can easily substitute and it will be great! If using dairy, just use 1 cup of heavy cream, and 1 cup of half and half instead of the dairy free milks.

I love to top them with homemade caramel and whipped cream. It is rich, so something to cut through that and balance the chocolate is a great addition!
Ingredients:
- 5 large egg yolks
- 1 cup coconut milk, full fat, just the cream (it is best to use a brand that has gums in it to help emulsification)
- 1 cup almond milk
- 1/2 cup date sugar or coconut sugar
- pinch of salt
- 2 cups semi sweet chocolate chips
Preparation:
STEP 1.
In a pot, whisk the egg yolks together. Add the milks and whisk to combine. Add the sugar and pinch of salt and whisk in. Place over medium heat and whisk continuously until it starts to thicken, around 3-5 minutes. Once it is thick enough to coat a back of the spoon and not move, take it off the heat. Make sure to do this process over medium heat, not high! We don’t want to scramble the eggs, so you must slowly bring them up to temp.
STEP 2.
Whisk in the chocolate chips until combined.
STEP 3.
Pass the mixture through a fine mesh strainer into a clean bowl. Pour the mixture into 4 oz ramekins and transfer to the fridge. Allow the budinos to set in the fridge for 2-3 hours.
STEP 4.
Serve and enjoy!
I love this and the paleo version is outstanding. I love chocolate, so for me it a way to enjoy it without sacrificing my preference for healthy food. Try it!
