Making restaurant quality fish at home is a lot simpler than you would think. Here I am using branzino filets, but any white fish, or skin on fish, works well!

Ingredients:

  • 2 branzino filets, or skin on fish filet of your choice
  • salt
  • avocado oil

Preparation:

STEP 1.

Using a very sharp knife, make slits through the skin of the fish, just through the skin, not into the flesh.

STEP 2.

Season the fish with salt on both sides and in the slits as well. Thoroughly pat dry with a paper towel.

STEP 3.

In a stainless steel pan over medium high heat, add avocado oil once the pan is hot. Once the oil is at it’s smoking point, add the branzino filets, holding the filet down for 5-10 seconds to make sure the skin doesn’t retract. Cook skin side down until it is about 90% cooked through and the skin is very golden brown, around 3-5 minutes. Flip and finish cooking for another 1-2 minutes. Remove from the pan and serve.
