Opah is the perfect fish for grilling. It is a firmer fleshed fish, so it can hold up to the high heat and grill.
I recently got this opah filet from OC Wild Seafood. If you are local to Orange County and get the chance to get your hands on opah, you must try it!

This is a super simple meal that is delicious and highlights how great the flavor of opah is!
Ingredients:
- 1 opah filet
- salt and pepper
- squeeze of one lemon
- 1 tbsp butter
- 1 bunch of asparagus, grilled
- zest from one lemon
Preparation:
STEP 1.
Season the opah with salt and pepper on all sides.
STEP 2.
Heat a grill or grill pan to medium high heat. Oil the grill or spray with oil spray. Add the opah and grill for 2 minutes, then rotate 90 degrees to get the diamond grill marks. Once you have the hatch marks, flip over. Add lemon juice and a tablespoon of butter. Cook through until the internal temperature reaches 125*F for medium rare.
STEP 3.
Serve with asparagus and garnish of lemon zest.
