Homemade mayo is so much better than store bought mayo, both in flavor and ingredients. This is the easiest immersion blender recipe that takes under 5 minutes to make.
You can also do this in a real blender, just make sure to blend all but the oil first, then while blending, slowly add the oil.

Ingredients:
- 1 egg
- juice from one lemon
- 1 tsp dijon mustard
- salt to taste
- 1 cup avocado oil
Preparation:
STEP 1.
Mix all with an immersion blender, adding the oil last and blending from top then pull up with the immersion blender.
Troubleshooting – if it didn’t mix properly you may have to blend all but the oil to start, then while blending, slowly add oil to mix!

will olive oil work instead?
I wouldn’t use olive oil, it is too strong of a flavor and results in bitter mayo. Use only neutral oils!
